ICED MATCHA SOY RECIPE 2024 UPDATE

There is no secret in this delicious drink that we serve at the tea house. It is particularly popular during summer time (or for those who likes cold drinks in any day of the year). Now you can enjoy this at home too with our recipe. We like a “strong” matcha latte (we only use Bonsoy in the teahouse, but feel free to experiment with your favourite milk).  We understand taste is a personal preference but we believe a good matcha, like a good coffee, requires no sugar. This stone ground matcha we use is specifically created for blending with milk (or soy milk, oatly, etc). It gives a lingering nuttiness aftertaste and makes you crave for more. Each sip becomes more enjoyable! Yes we are bias but we have tried so many, far too many, disappointing matcha latte, and we are really proud of our one!

So here it is, the recipe:
Ingredients:
6 grams of matcha Mokuren
75ml of hot water (~50-80°C)
(Whisked together rapidly, this forms the matcha base which you can pour steamed milk into for a hot matcha latte, or poured over iced milk for iced)
165ml iced milk of your choice (we only use bonsoy)

1. Sift matcha in a katakuchi (bowl with a spout, which is good for pouring but a normal bowl will do too) and add cooled hot water (75-80 degrees) into it and whisk with a chasen (bamboo whisk). You do not want your drink to be too watery so avoid adding too much water here.

2. Fill a glass with ice and pour milk of your choice in. To create a beautiful two layers, slowly pour the matcha that you have whisked onto an ice cube in the glass (instead of quickly into the milk). Stir and enjoy!

*Water is VERY important when it comes to Japanese tea. There is no point in making tea if you have good quality tea but bad quality water, it destroys the tasting completely. We have done so many experiments and even the farmers and tea producers that we work with always emphasise the importance of water. Go for soft spring water. Avoid high mineral level water. 

Another recipe that we like is the iced matcha we create with matcha mokuren. Sift 4 grams of matcha in a katakuchi. This time pour 165ml water, whisk and pour into a glass filled with ice. Enjoy it! It is really addictive!
