NEW COURSE STRUCTURE

NEW COURSE STRUCTURE FROM MARCH 2025

We are always looking for ways to refine the tea experience and offer a service and experience that we can feel proud of, so we are extremely excited to share some details about our next transition which will be coming into effect from March.

We are embarking on a more in-depth approach to further immerse our guests into the world of fine Japanese tea, through traditional and modern preparation methods, our carefully curated handcrafted ware, as well as our seasonal and freshly made wagashi.

Haku means white. We imagine our guests arriving as a blank white canvas - the new line up will allow us to share with our guests the different processing methods and flavour profiles possible in the world of quality Japanese tea. With Haku we are officially introducing a tasting of tencha to be served before matcha. Tencha is the name of the tea leaves that are stone ground into matcha - a tea that is rarely offered in its leaf form.

Haru means spring. This line up showcases seasonal flavours and features some very special and rare teas with different preparation method to reflect the Spring season, as well as a seasonal dish exclusive to the Haru menu (Sakura Sakura). Throughout the next three seasons, we will also be introducing Natsu (Summer), Aki (Autumn) and Fuyu (Winter).

The tea experience will be lengthened from 120 minutes to 150 minutes in duration, with Quiet Tea Time being renamed as the Silent Japanese Tea Experience, and Casual Tea Time being renamed as the Japanese Tea Experience, to more accurately reflect the service.
