This Uji matcha set includes both single cultivar: Asahi , Ujihikari and Samidori

All three are suitable for usucha and koicha preparation.

Grown and processed by Tsuji Kiyoharu, who focuses on just one tea, tencha (raw ingredients of matcha before grinding). Using double layer shading and traditional Uji shading method (honzu - rice straws) over 95% of the sunlight is blocked toward the end of the shading process. The leaves have been shaded for 50 days in total. Tsuji Kiyoharu won First Place in the national annual tea fair 2022 in the Tencha category with 200/200 marks. His son placed second with 199/200 marks in both 2021 and 2022.

Profile

Overall Uji matcha profile: Savoury, grassy/vegetal umami. After adding hot water and while whisking you will be greeted with a strong fragrance.

Asahi: Powerful, with a dark chocolate-like lingering aftertaste, low sweetness overall and an enjoyable low bitterness. The richest of the three.

Ujihikari: Savoury umami with a clean taste throughout and a refreshing finish. The brightest of the three.

Samidori: Deep, slightly vegetal umami with a low bitterness throughout. Not as rich as Asahi and not as bright as Ujihikari, but very enjoyable in its own right. An excellent matcha to prepare as koicha (4g:25-30ml, kneaded slowly), somehow becoming cleaner in savoury taste and lower in bitterness, with less brightness but incredibly satisfying intensity.

Interesting fact: The amino acid levels in these matcha are some of the highest recorded at around 15%, compared to an average of 8% in high grade matcha.
